What is the best way to store herbs, garlic, onion, etc for long term use?

I would like to store herbs, garlic, onions, potatoes, etc for long term use. Most of what I buy tends to go bad before I use all of it. Any suggestions?
Dehyrdate them and then vacuum seal them.
If you take out the water, other organisms and internal enzymes in the herbs will not go active and break them down. Seal the air out, and you take away the chance for oxidative damage to the herbs. They will not keep forever, but it will extend storage. then keep them in a cool, dark place.
Herbs are not means for long-term storage. Dry herbs will last, at most, a year. Potatoes and onions can be stored in a cool dark place (root cellar). Garlic probably the same as onions.

All can be chopped and frozen, apart from the potatoes.

I usually store the garlic in the fridge it keep for ages,
Potatoes and onions i just keep in a dry place, like a cupboard or something, although potatoes can go off quite quick but mine usually last a while and the onions always last ages,
as for herbs just keep them in a dry place if this is fresh herbs or if its jar herbs then they last anyway.

They need to be stored in a cool dry place. Think root cellar 58 degrees is about right. If you dont have this environment they tend to go bad.

I put my onions and potatoes in separate paper bags and put them in the fridge. They last much longer doing that. I’m not sure about herbs and garlic, maybe try a paper bag with them too.

Cool and dry for the roots, but don’t store your onions and potatoes next to each other…the potatoes will rot more quickly. My high school grocery store job didn’t teach me much, but it did teach me that.
You can chop the herbs and store them, frozen in water, in ice cube trays. Works like a dream.
